Ingredients
  

  • 6 medium potatoes Russet or Yukon Gold
  • 1 lb ground beef
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1/4 cup fresh parsley chopped (optional)
  • 2 large eggs beaten
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions
 

  • Peel and boil the potatoes until tender. Mash them in a large bowl, seasoning with salt and pepper. Let cool slightly.
  • In a skillet, sauté diced onions and minced garlic until fragrant. Add ground beef, paprika, cumin, salt, and pepper. Cook until fully browned. Stir in fresh parsley, then set aside to cool.
  • Take a handful of mashed potatoes and flatten it into a disc. Add a spoonful of the beef mixture in the center, then fold the edges over to seal the filling inside, forming a ball. Repeat with remaining ingredients.
  • Set up a breading station with three bowls: flour, beaten eggs, and breadcrumbs. Coat each potato ball in flour, dip in the egg, and roll in breadcrumbs until evenly coated.
  • Heat vegetable oil in a deep pan or skillet to 350°F (175°C). Fry the coated balls until golden brown, about 3–4 minutes per side. Drain on paper towels and serve hot.

  • For extra crispiness, double coat the balls in breadcrumbs.
  • For a healthier option, bake the stuffed potato balls at 400°F (200°C) for 20–25 minutes, flipping halfway through.
