- 8 oz goat cheese softened
- 2 fresh jalapeños deseeded and finely diced
- 12 egg roll wrappers
- 1 egg beaten, for sealing
- 1 cup shredded cheddar cheese optional
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying
Prepare the filling by mixing goat cheese, diced jalapeños, shredded cheddar (if using), garlic powder, salt, and black pepper in a bowl until well combined
Lay out an egg roll wrapper on a clean surface with a corner facing you. Add 1-2 tablespoons of the filling mixture near the center.
Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Brush the top corner with the beaten egg to seal the roll.
Heat vegetable oil in a deep pan to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, turning occasionally until golden and crispy.
Remove the egg rolls and drain on paper towels. Serve hot with your favorite dipping sauce.
