Ingredients

  • 1 lb 450g steak (sirloin, ribeye, or tenderloin), cut into bite-sized cubes
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika optional, for extra flavor
  • 1 tsp fresh thyme or parsley chopped (for garnish)

Instructions

  • Cut the steak into evenly sized bite-sized cubes (about 1-inch pieces). Pat dry with a paper towel to remove excess moisture for a better sear.
  • In a bowl, toss the steak bites with salt, black pepper, and paprika (if using). Let the steak sit at room temperature for about 5 minutes.
  • Heat 1 tbsp of olive oil in a cast-iron skillet over medium-high heat until hot. Add the steak bites in a single layer (avoid overcrowding). Sear for 1-2 minutes per side until a golden-brown crust forms. Remove steak bites from the pan and set aside.
  • Reduce heat to medium-low, then add butter and minced garlic to the skillet. Stir for 30 seconds until fragrant, then return the steak bites to the pan.
  • Toss the steak bites in the garlic butter sauce until evenly coated. Sprinkle with fresh thyme or parsley for garnish. Serve immediately with your favorite side dishes.

Notes

Additional Tips:

  • For extra tenderness: Marinate steak bites in a mixture of olive oil, garlic, and Worcestershire sauce for 30 minutes before cooking.
  • Use high heat: This ensures a crispy, golden crust while keeping the inside juicy.
  • Don’t overcook: For medium-rare, aim for 130-135°F (54-57°C) internal temperature.
  • Best sides: Pair with mashed potatoes, roasted vegetables, or a fresh salad.
