Ingredients
  

  • 1 cup kataifi pastry finely chopped
  • 2 tbsp unsalted butter melted
  • 2 tbsp tahini
  • 1 tbsp honey or maple syrup for a vegan option
  • 200 g high-quality dark chocolate melted
  • ¼ tsp sea salt optional, for enhanced flavor
  • 2 tbsp crushed pistachios for garnish

Instructions
 

  • In a pan over medium heat, toast the finely chopped kataifi pastry with melted butter. Stir continuously until golden and crispy, about 5 minutes. Set aside to cool.
  • In a mixing bowl, combine pistachio cream, tahini, and honey. Stir until you achieve a smooth and creamy consistency.
  • Using a double boiler, melt the dark chocolate slowly while stirring. Ensure the chocolate is smooth and glossy for the best results.
  • Pour a thin layer of melted chocolate into silicone molds and let it set slightly. Add a layer of the kataifi-pistachio filling and gently press down. Cover with the remaining melted chocolate and smooth the top.
  • Refrigerate the bars for at least 30 minutes until fully set. Carefully unmold, sprinkle with crushed pistachios, and serve.
