Ingredients
  

  • 2 large Russet potatoes
  • 4 cups peanut oil or vegetable oil for frying
  • 1 teaspoon salt
  • ½ teaspoon paprika optional, for extra flavor
  • ½ teaspoon garlic powder optional
  • Cold water for soaking

Instructions
 

  • Wash and scrub the Russet potatoes. Using a mandoline slicer with a waffle blade, cut the potatoes into waffle-shaped slices. Rotate the potato 90 degrees after each slice to achieve the classic waffle fry shape.
  • Place the sliced potatoes in a bowl of cold water and let them soak for 20-30 minutes. This removes excess starch and helps achieve crispy fries. After soaking, drain and pat them completely dry with paper towels.
  • Heat peanut oil in a deep fryer or large skillet to 325°F (163°C). Fry the waffle fries in batches for 2-3 minutes, until slightly cooked but not browned. Remove and let them drain on a paper towel-lined plate. (Optional: Place them in the freezer for 15 minutes to enhance crispiness.)
  • Increase oil temperature to 375°F (190°C). Fry the waffle fries again for 3-4 minutes, until golden brown and crispy. Remove and drain on a paper towel.
  • While still hot, sprinkle with salt, paprika, and garlic powder (if using). Serve immediately with Chick-fil-A sauce or your favorite dipping sauce.

Notes

Additional Tips:

  • If you don’t have a mandoline slicer, use a crinkle-cut knife and slice thinly, rotating the potato 90 degrees between cuts.
  • For healthier fries, bake at 425°F (218°C) for 25-30 minutes, flipping halfway through.
  • An air fryer can also be used—cook at 375°F (190°C) for 12-15 minutes, shaking the basket halfway.
  • Store leftovers in an airtight container and reheat in an air fryer or oven at 375°F (190°C) for 5 minutes.
