- 12 small corn tortillas
- 2 cups shredded cooked chicken or protein of choice
- 1 cup red enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced onions optional
- 1/2 cup sour cream for garnish
- 1/4 cup chopped fresh cilantro for garnish
