Ingredients
  

  • 4 salmon fillets
  • ¼ cup brown sugar
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp lemon zest
  • 1 tbsp dill
  • Wood pellets alder or cherry

Instructions
 

  • Preheat pellet grill to 180°F.
  • Pat salmon dry and season with salt, pepper, sugar, lemon zest, and dill.
  • Place fillets on grill and smoke for 1-2 hours until internal temp reaches 145°F.
  • Remove and let rest for 5 minutes.
  • Serve with fresh lemon wedges.
