Ingredients
  

  • 1 whole chicken 4-5 lbs
  • ¼ cup olive oil
  • 2 tbsp salt
  • 2 tbsp black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Wood pellets apple or cherry

Instructions
 

  • Preheat pellet grill to 225°F.
  • Pat chicken dry and rub with olive oil.
  • Mix dry ingredients and season the chicken inside and out.
  • Place chicken breast-side up on grill and smoke for 3-4 hours until internal temp reaches 165°F.
  • Rest for 10 minutes before carving and serving.

Notes

Additional Tips:

  • Use a meat thermometer to check the thickest part of the breast.
  • Baste with butter for extra crispy skin.
